Sourdough Pancakes

  • 2 cups sourdough starter
  • 2 tbsp. sugar
  • 2 tbsp. oil
  • 1 egg
  • ½ tsp. salt
  • 1 scant tsp.baking soda; full teaspoon if start is really sour.
  1. Into the sourdough, dump sugar, egg and oil. Mix well. Add soda the last thing; when ready for batter to hit the griddle. Fold gently into sourdough, do not beat. Notice deep hollow tone as sourdough fills with bubbles and doubles bulk. Bake on a hot griddle to seal brown. Serve on hot plates with Vermont maple syrup.
